Using your hands, form the cake into cake balls. First melt your chocolate (candy coating) following the directions on the package. Then dip the cake ball into chocolate. &lt;span style="color:#339999;"&gt;I use a fork because it works best for me, so does the Corningware dish for the chocolate. Swirl the cake ball in the chocolate with the fork then tap a couple times and, before placing the cake ball on paper, scrape the bottom of the fork on the side of the bowl. That's because the minute I set them down, I scrape around the bottom with the fork--do it fast or the chocolate hardens. It took me a lot longer than it should have, but in the end it turned out great. &lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;Paul asked if I could make him a sugar free cake with sugar free icing and I did my best to make that happen. I was really happy the way it turned out and so was Paul, I've never seen someone eat a piece of cake as big as he did.&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;I know the cake is not completely sugar free, but there's a huge difference between this recipe and boxed cake mix.&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;&lt;a href="http://www.cooksrecipes.com/diabetic/chocolate-chocolate_cupcakes_recipe.html"&gt;Chocolate Cake&lt;/a&gt;:&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;1/2 cup cocoa &lt;/div&gt;&lt;div&gt;1/2 cup boiling water &lt;/div&gt;&lt;div&gt;1 1/2 cups sifted cake flour &lt;/div&gt;&lt;div&gt;1 cup SPLENDA® Sugar Blend for Baking &lt;/div&gt;&lt;div&gt;1/2 teaspoon baking soda &lt;/div&gt;&lt;div&gt;1/4 teaspoon salt &lt;/div&gt;&lt;div&gt;3/4 cup butter &lt;/div&gt;&lt;div&gt;2 large eggs, lightly beaten &lt;/div&gt;&lt;div&gt;1/4 cup milk &lt;/div&gt;&lt;div&gt;1 teaspoon vanilla extract&lt;/div&gt;&lt;div&gt;&lt;br /&gt;Preheat oven to 350°F (175°C).&lt;br /&gt;Combine cocoa and boiling water, whisking until blended. Set aside.&lt;br /&gt;Combine flour, SPLENDA® Sugar Blend for Baking, baking soda, and salt in a large mixing bowl. Cut butter into flour mixture with a fork or a pastry blender until crumbly. (This procedure may be done with a mixer at the lowest speed. Cover mixing bowl with a clean tea towel to prevent spattering). &lt;/div&gt;&lt;div&gt;&lt;br /&gt;Combine eggs, milk, cocoa mixture and vanilla in a small mixing bowl; add 1/3 of the egg mixture to flour mixture. Beat at low speed of an electric mixer until blended. Beat at medium speed for 30 seconds or until batter is smooth, stopping to scrape down sides of the bowl. Repeat procedure 2 times.&lt;br /&gt;&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;** This recipe only gave baking instructions for cupcakes, so I just guessed. The pancakes taste great &amp;amp; it's really simple. I did use whole eggs instead of egg whites though, &amp;amp; I added a bit of salt. The raspberry sauce was also my creation.&lt;br /&gt;&lt;br /&gt;2 eggs whites&lt;br /&gt;1/2 cup oatmeal&lt;br /&gt;1/2 cup fat-free cottage cheese&lt;br /&gt;1/8 teaspoon baking powder&lt;br /&gt;Dash of salt&lt;br /&gt;1/2 cup frozen raspberries&lt;br /&gt;2 tablespoons of Splenda&lt;br /&gt;&lt;/div&gt;&lt;div&gt;1. Raspberry Sauce:In a saucepan, bring less than 1/4 cup of water to boil, add raspberries, crush berries as they simmer, add Splenda, and stir until sauce reaches desired thickness. Pour into serving dish &amp;amp; chill until needed.&lt;br /&gt;&lt;br /&gt;2. Blend first five ingredients until smooth (I use the magic bullet; if you use a blender be sure to put the wet ingredients in first) &lt;/div&gt;&lt;div&gt;&lt;br /&gt;3. Pour approximately 1/4 cup batter for each pancake onto heated griddle or non-stick pan (check to see if its hot enough with a splash of water-if it sizzles, its hot enough) &lt;/div&gt;&lt;div&gt;&lt;br /&gt;4. When pancake bubbles, flip and cook the other side &lt;/div&gt;&lt;div&gt;&lt;br /&gt;5. So today that's what I did.&lt;br /&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;They're sugar cookies made with Splenda, but the icing is full of sugar (oh well). &lt;/div&gt;&lt;br /&gt;&lt;div&gt;The designs were something I thought of after the class and I am very pleased with how they turned out (well most of them).&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Please let me know which one is your favorite!! If you click on the picture to enlarge it, you might be able to make a better decision. &lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;u&gt;Cookie Recipe&lt;/u&gt;&lt;/div&gt;&lt;div&gt;1 cup butter (two sticks)&lt;/div&gt;&lt;div&gt;1 cup granulated SPLENDA&lt;/div&gt;&lt;div&gt;1 egg&lt;/div&gt;&lt;div&gt;1 tsp. vanilla extract&lt;/div&gt;&lt;div&gt;3 cups flour&lt;/div&gt;&lt;div&gt;1 1/2 tsp. baking powder&lt;/div&gt;&lt;div&gt;1/2 tsp. salt&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Cream together butter &amp;amp; Splenda until "fluffy". Add egg &amp;amp; vanilla. Mix dry ingredients in a bowl, then add to butter mixture. Mix well. Roll out dough to 1/4" &amp;amp; cut out cookie shapes. (Best if chilled before baking) Bake 8-10 minutes at 350 F. Yields approximately 4 dozen, 3" cookies.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Now, I will be completely honest, my cookies did not taste so good, but it wasn't because of the Splenda. As I just typed the ingredients, I realized I forgot to add the salt. The texture it kinda tough/chewy, but I like that.
